Next, they are floated for a second round of quality sorting and thoroughly rinsed before finally being spread out on raised beds to dry.\u003c\/span\u003e\u003cb\u003e\u003c\/b\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003e\u003cstrong\u003eTAKE A SIP |\u003c\/strong\u003e \u003c\/span\u003e\u003cspan\u003eWhen \u003c\/span\u003e\u003cspan\u003ehot, \u003c\/span\u003e\u003cspan\u003ethis coffee is really giving Ethiopia vibes. It’s intensely floral, like jasmine and lavender. Even the sweetness seems touched by flowers, reminding us of wildflower honey. Complex citrus sings. \u003c\/span\u003e\u003cb\u003e\u003c\/b\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eAs the coffee reaches a pleasantly \u003c\/span\u003e\u003cspan\u003ewarm \u003c\/span\u003e\u003cspan\u003etemperature, both acidity and that honey-like sweetness tick upward. Florality persists, and delicate stone fruit, like white peaches, becomes more prevalent. The texture is soft and the finish is long, reminiscent of black tea. \u003c\/span\u003e\u003cb\u003e\u003c\/b\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eWhen \u003c\/span\u003e\u003cspan\u003ecool, \u003c\/span\u003e\u003cspan\u003ethis coffee is downright pretty. All the main characters are still there: florality, complex citrus, and honey. Subtle tropical fruit, like mangoes, emerges.
