With summer in full swing and the UV index turning a shade of reddish-purple, it's pretty clear we won't be decking the halls anytime soon. But. What we can do is have a little fun in the middle of this cruel summer. So, we're bringing back some of those beloved holiday flavors for you to enjoy from the comfort of any number of beachfront, poolfront, or lakefront destinations this year. Merry Christmas (in July), ya filthy animals. \u003c\/span\u003e\u003cstrong\u003e\u003cspan\u003e\u003cb\u003e\u003c\/b\u003e\u003c\/span\u003e\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cstrong\u003eHOW WE DID IT | \u003c\/strong\u003e\u003cspan\u003eBack in April, we released another seasonal coffee at a pretty unseasonable time - Carlos Plaza’s beloved cinnamon co-ferment. That coffee was bursting with notes that would tempt even Scrooge with the holiday spirit, like cinnamon, apple pie, caramel, and maple candy. Lucky for you (and for us!), we tucked some of that coffee away in our freezers for such a time as this! \u003c\/span\u003e\u003cstrong\u003e\u003cspan\u003e\u003cb\u003e\u003c\/b\u003e\u003c\/span\u003e\u003c\/strong\u003e\u003c\/p\u003e\n\u003cp dir=\"ltr\"\u003e\u003cspan\u003eIt’ll come as no surprise, then, that Carlos’s coffee makes up the lion’s share of this special release, weighing in at 75% of the final blend. To complement the very festive flavors found in that co-ferment, we paired it with the one and only Chinese coffee we’ve ever featured here at Black \u0026amp; White - a high-fermentation impact Catimor lot from Manxieba Village and the good folks at Torch Coffee. We chose this coffee because it intensified some of the existing notes in Carlos’s cinnamon lot and also introduced new, festive flavors, such as red berries and red wine (\u003c\/span\u003e\u003cspan\u003emulled wine, anyone?\u003c\/span\u003e\u003cspan\u003e). For all of his adult life up until 2015, Huver worked as a math teacher in his hometown of Nariño. But, he made the decision to return to his coffee growing roots after global coffee prices plummeted in 2014, putting his family's farm - and livelihood - at great risk. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eAfter years of trial and error and with new protocols in place, the Castillo family exported their first lots of \u003cem\u003especialty\u003c\/em\u003e coffee in 2018. This shift from commodity to specialty, plus a tireless focus on quality and improving processing techniques, helped to sustain the family business. Today, Huver works alongside his father on a farm that's been in his family for over twenty years, and he couldn't be prouder of their resilience and achievement.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eTRUST THE PROCESS |\u003c\/strong\u003e After being picked at peak ripeness, the coffee cherries are separated and spread out in a climate-controlled environment, where they are allowed to oxidize for 48 hours to enhance the fruit flavors you're going to taste as you sip this coffee. Next, the coffee is de-pulped and a portion of the mucilage is retained, being combined with molasses and lactic acid bacteria (LAB) to create a \"fermentation starter.\" Two rounds of fermentation then ensue: first, a 48-hr aerobic fermentation with plenty of stirring and the addition of lixiviates. Then, a 48-hr lactic fermentation, wherein a fresh inoculum of LAB is introduced and the environment is made anaerobic, which better supports lactic fermentation. Finally, the beans are carefully washed and spread out to gradually dry, until a moisture content of 10-12% is achieved.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eTAKE A SIP | \u003c\/strong\u003eThe unique processing detailed above results in a cup of coffee that expresses the Pink Bourbon variety in a delightfully different way. Two rare fruit notes, honeycrisp apple and guava, are a lively surprise at first sip. The cup is sweet throughout, like turbinado sugar. When he's not expertly executing complicated processing techniques at his state-of-the-art facility in Quindio, Edwin is a sought-after consultant throughout Colombia, Mexico, and Brazil. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eTRUST THE PROCESS |\u003c\/strong\u003e This coffee is actually a blend of two fermentation experiments from Edwin's farm: the first is a \u003cem\u003esuuppperrr \u003c\/em\u003eintense green apple co-ferment which comprises 65% of the blend; the remaining 35% comes from a lot called Ruby, which was fermented with berries and dehydrated red fruits.\u003c\/p\u003e\n\u003cp\u003eIn both cases, the coffee cherries were handpicked at peak ripeness and then underwent an initial soak in water for two hours. Then, they undergo a 96-hr period of carbonic maceration, during which time the mosto is collected. This mosto is then inoculated with yeast, glucose, and amino acids before being infused with the fermentation fruit of choice (dehydrated green apples for Green Apple, and a collection of blackberries, strawberries, and raspberry pulp in the case of Ruby).\u003c\/p\u003e\n\u003cp\u003eAfter the coffee is pulped, this infused mosto is added back to the mixture before it all undergoes a second round of fermentation, submerged in water for 72 hours. Finally, the coffee is spread out to sun-dry on African raised beds for about 15 days, until 10.5% moisture content is achieved.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eTAKE A SIP | \u003c\/strong\u003eWhen we first cupped the green apple co-fermented lot, we found it to be big and wildly intense - even by our standards! We knew it deserved a spot on our menu but weren't sure how to utilize it... until someone at a similar cupping table mentioned\u003cem\u003e gummy sharks. \u003c\/em\u003eAfter a little experimenting of our own, we found this blend with Edwin's more familiar Ruby coffee to bring out flavors remarkably similar to the gas station nostalgia of our youth. But, before Wilton added \"coffee pioneer\" to his LinkedIn profile, he was a trained chemical engineer! He has since redirected his scientific expertise toward his lifelong passion for cultivating coffee, and processing triumphs like this one are a delicious testament to that endeavor.\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eTRUST THE PROCESS |\u003c\/strong\u003e After being handpicked at peak ripeness, the coffee cherries are sorted for quality by both size and density. They then undergo two rounds of sterilization, first with ozonated water, and second with ultraviolet light. The coffee cherries are in for a wild ride after this, as they're about to undergo three rounds of fermentation. The first round is 52 hours of anaerobic fermentation in cherry at a temperature of 18 degrees Celsius, during which time yeast is added to the mixture. During this time, the mucilage is recovered so that it can be added back to the fermentation environment in the next round. The cherries are then pulped before heading into round two: anaerobic fermentation in mucilage for 48 hours, at a slightly warmer temperature of 21 degrees Celsius. The cherries undergo a third and final round of fermentation in an aerobic environment for 68 hours. After this, they are washed using a thermal shock method: first, with water at 40 degrees Celsius, and second, with water at a chilly 12 degrees Celsius. Finally (finally!), the cherries are dried for 48 hours at a consistent temperature of 38 degrees centigrade.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eTAKE A SIP |\u003cspan\u003e \u003c\/span\u003e\u003c\/strong\u003e\u003cspan\u003eCoffee industry folk and casual consumers alike will rejoice in this cup! For a thermal shock coffee, it's quite balanced, and it manages to pull off tropical fruit flavors (like mango and pineapple) without being downright intense. Stone fruit, like red plum, is also readily apparent. We also love taking inspiration from our favorite candies, desserts, and cocktails to create (or re-create) new and interesting flavor profiles in caffeinated form. With warmer weather on the not-so-distant horizon, our minds have been drifting to the latter—tropical bevys, good hangs, and teeny, tiny umbrellas.\u003c\/p\u003e\n\u003cp\u003eSpeaking of teeny, tiny umbrellas… they were a hot commodity following the imminent fall of Prohibition. Less than a year after the repeal of America’s least popular Amendment, Donn Beach opened Don the Beachcomber’s in Los Angeles in 1934, and Victor Bergeron followed with the establishment that would become known as Trader Vic’s in 1936. Together, these two men paved the way for the rise of tiki bar culture in the US, mixing Caribbean-style rum drinks with loosely Polynesian decor to craft the perfect cocktail of exotic escapism for which Americans at the time were desperately searching.\u003c\/p\u003e\n\u003cp\u003eDonn and Victor, however, were not exactly chummy. Where Trader Vic claimed to have been “inspired by” Donn, Donn accused Victor of stealing his ideas outright. At the center of their decades-long rivalry sat the Mai Tai. Invented by Trader Vic in 1944 and named after a Tahitian colloquialism that roughly translates to “awesome,” the Mai Tai slowly rose to popularity for its unique balance of strength and sweetness, a feat not often accomplished in other tiki cocktail creations. Donn insisted that Victor had tried to copy his own Q.B. Cooler cocktail when creating the Mai Tai, even though the drinks only share two ingredients, and the Mai Tai only had five ingredients compared to the Q.B. Cooler’s ten. The feud over the origin of the Mai Tai came to a head in 1970, when Donn Beach lost a lawsuit over the matter, but Trader Vic was subsequently forced to reveal his proprietary recipe, which he did in a seven-page press release titled “Let’s Get the Record Straight on the Mai Tai.”\u003c\/p\u003e\n\u003cp\u003eToday, everyone seems to have an opinion about which tiki trailblazer deserves credit for the drink, but there is one singular point on which we can all agree: the Mai Tai is perfect. Boozy yet balanced, equal parts strong and sweet, it is a drink capable of transporting you to a Tahitian beach even if you’re sipping it in the back of a rum bar in blustery Chicago. (We should know.) The holy trinity of flavors in this drink—tropical fruit, Jamaican rum, and subtle spice—are what we sought to re-create while concocting our own cocktail of coffees.\u003c\/p\u003e\n\u003cp\u003eThe result, we think, is one which would meet the approval of both Donn Beach and Trader Vic—perhaps even a drink on which they could actually agree.\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eHOW WE DID IT | \u003c\/strong\u003eTo re-imagine this iconic cocktail in coffee form, we sought out coffees that were fruit-forward and boozy, but also light-hearted and sweet. We needed to incorporate that signature touch of spice, too. After several experiments and one broken tiki glass (RIP), we eventually found everything we were looking for in four coffees from Colombia and Costa Rica:\u003c\/p\u003e\n\u003cp\u003e40% Rodrigo Sánchez - Banana (Huila, Colombia)\u003c\/p\u003e\n\u003cp\u003e40% Los Nogales - Typica Origins (Huila, Colombia\u003c\/p\u003e\n\u003cp\u003e15% Wilton Benitez - Pink Bourbon (Cauca, Colombia)\u003c\/p\u003e\n\u003cp\u003e5% Esteban Zamora - Cinnamon Anaerobic (Tarrazú, Costa Rica)\u003c\/p\u003e\n\u003cp\u003e\u003cstrong\u003eHOW IT TASTES | \u003c\/strong\u003eJamaican rum might be the first flavor call at the cupping table, but just like the cocktail for which it is named, this coffee is shockingly easy to drink (albeit much less dangerous). Rodrigo’s banana co-ferment contributes a healthy dose of banana-like sweetness to this tropical cocktail, reminding us of a strawberry banana smoothie. Other tropical fruits, like pineapple and passion fruit blend seamlessly with the beverage, and a hint of baking spice—courtesy of Esteban’s renowned cinnamon co-ferment—round out the flavor trinity that we sought to re-create. If ever there was a cup of coffee that belonged at both the breakfast table and the beach, this is it.
